I feel like this isn't too unlike the old Xserve's that could get up to a price this high. They're machines with a very, very limited use case, and budgets to match.

$589 for above three, rest I guess is for Apple Experience.

Look up the price for 1.5tb of ram in the required size - it’s insane.

Similarly the maxed out GPUs are “pro” GPUs which costs thousands each (I have no idea why).

Well there is a Rack Based Mac Pro, I think may be there are some niche use case in server scenario. ( Running Multiple VMs )

MacOS build/test servers, potentially- but I'm not sure that would be a useful CPU to memory ratio.

No supercomputer in the TOP500 runs macOS (or any OS other than Linux, since a couple of years ago).

RAM is used as a disk cache. RAM-drive can also be useful.
