Google Talk was the largest federated XMPP server, and it provided an easy way for people using XMPP to talk to non-technical users. "I'll add you on XMPP" = blank stares, "I'll add you on Google Talk, just use your Gmail account" works, even if you yourself are not using Google Talk.
