Anyone have any insights into why this doesn't seem to come with a rise in unemployment rates in the US?
Its still common to see headlines and politicians touting how low unemployment is and how many jobs were created last month. Is the data wrong, or is this issue very limited to a small enough population that it doesn't raise national numbers?

It may be true that unemployment may not be high as is officially defined, i.e someone with a just a job.
But if you look closely, many hardworking and capable people find it hard to make ends meet, with the jobs they have. Basically the middle class is being hollowed out.
