"Bloat" means what exactly: Download size? Slowness to start? I suspect you really mean complexity of the interface, but with careful design its possible to hide the complexity and provide various easy entry modes.

Anyway no one uses an alternative to MS Word / Office 365 because the alternative has fewer features.
