Others have mentioned the Analog Discovery 2, a multi-function usb device. There's a nearly identical product made by Analog Devices called ADALM 2000. The hardware and software spec's are on par, but the price is about half. I managed to snag one off ebay for $50, and it's worked great for me so far.

I love my AD2, got rid of the Saleae. It's scriptable and can generate digital and analog outputs as well. Super versatile.

The lowest price on eBay right now is $200, with prices ranging from $200-$238.

The recently released ESP32-S3 is a dual core, so it doesn't look like they are abandoning multi-core chips anytime soon.

FYI, ESP32-S2 does not have bluetooth at all.
