Avoma.com does this exact workflow (Disclaimer: I'm a co-founder).
It has collaborative note-editor like Google. So during the meeting, you and your colleagues can take notes in the same document, or you can also take private notes.
All manual typed notes are linked to meeting recording and transcript to refer back the context later on.
On top of that, Avoma's AI will also extract some additional notes - like Action items, etc.
And if you or AI missed taking some notes, you can highlight the transcript text to add it to Notes.
It's the best blend of human intelligence working with artificial intelligence to create most structured notes, in the least amount of time.
And it works with all conferencing providers – Zoom, Google Meet, Microsoft Teams, GoToMeeting, etc. So you don't have to worry which conferencing supports recording or not. It's always taken care for you.

We're based in Silicon Valley, but if you live outside the Valley, we still really want to talk to you (we'll pay for your flight, hotel, and meals when you come interview with us).
Actually you can use Mixpanel exactly for that. We're a B2B company and have exact same use case as yours. We provide some Javascript code that our customers add on their sites. We don't require our customers to have Mixpanel account and we also don't load our Mixpanel JS to our customers' site.
What we do is - we send requests to our server from our customers' site with key information that we want to track, and then we send those events to Mixpanel through server API (e.g. PHP) calls.
It works really well for us. We're measuring how our customers' customers are using our Javascript based widget, and are able to improve our performance, engagement, etc.
I'm not sure charging $10/month is the right way of monetizing this service. It's useful, but you have to think is it valuable and critical enough to pay $10/month? For "consumers", you should target somewhere around $3-$5/month. That too, not all consumers will pay this - so you have to have some Freemium approach. I feel current version of service should be Free and do Ad-based revenue. And then you add more advanced features based on user feedback, and then make that Premium plan with no Advertising.

Frankly speaking, I haven't handled this case yet. I guess most users are genuine. And so far no one has complained, so I wasn't really worried about it. But I see your point, and need to think about this - at least I need to have some plan in mind in case such thing starts happening.
